They say you get the best ideas at the most random times. I have found this to be true. I have had many times in my life when I am surprised where God chooses to reveal things to me. In all aspects of my life, work, personal, school, I have gotten some great ideas to help me in a time of need. Being a food blogger, it is no mystery I get some of my most inventive recipes in the most random of places.
I have thought of recipes ideas in the shower, while on the loo, in the middle of class when I should have been paying attention. Also, in the middle of a work meeting, on car rides, in the doctor’s office, even in the middle of supposed REM sleep!
This recipe is no different, I actually thought of riced rutabaga while doing my morning routine! While brushing my teeth, I began playing through the menu I had created for the week. Thinking of how I was going to cook food around everything I had to do during the weekend. Chicken stir fry was on the menu and I had planned to pair it with rutabaga mash.
However, not too thrilled about the pairing, mostly because stir-fry typically goes with rice. I could not bring myself to make mash, just did not seem right. Rice is a definite no no while following the Specific Carbohydrate Diet so the idea popped in my head to turn the rutabagas into rice. Just like that a recipe is born.
There was a 90 percent chance it would work out right, you never really know until you are putting it together. If it did not pan out, I could always turn it back to mash like originally planned.
Well, it panned out great and it is very easy to make. All it takes is four ingredients. Yes, you read that correctly, FOUR ingredients. Rutabagas are naturally flavorful on their own. They do not require an abundance of spices to flavor it. I love how versatile this vegetable is as well. I have used it for mash, fries, and now rice.
Riced rutabagas beats out cauliflower rice any day. Go ahead and give it a try, you will not be disappointed.
